Email signup
With a little bit of FBML code, you can embed an email signup form on your page. On the right, you can see how email marketing provider VerticalResponse does it on their page:
Once you build up this list, you can create special email promotions targeted directly to your Facebook audience.
Special deals module
Swiss-Belhotel uses Facebook to drive people to their “Red Hot Deals” landing page:

From here, they are sent to a highly-optimized landing page that probably earns high conversion rates:

Or you can go a step further. By setting up your page so that visitors see the “promotions” tab first, you can highlight a special offer or package. Here’s how Hard Rock Las Vegas does it:

FBML is a great application from Facebook that can enhance your business presence there.
I most definitive believe that Facebook should be part of your Hotels Marketing Strategy. There are several great tools Facebook has yet to integrate. Eventually there will come some location-based apps there similar to Foursquare or Gowalla. Or maybe some kind of integration with these programs.
With over 300+ million users Facebook represent a large portion of most Hotels Market segment.
It’s a learning process for all of us. So follow the baby step process and utilize FBML like Josiah shows here.
I will start add some FBML to my Facebook fan page.

The majority of Facebook users are from ages 13 to 34, which for most hotel operators is just outside their demographic. That being said, it’s best to establish a long-term social media marketing strategy now to ensure when those potential customers come of age they’ll be looking at your properties as opposed to the competition.
We did this for a client (http://www.facebook.com/sevenhotelparis) it resulted in approx one booking per day since implementation. Let’s see how it picks up.
